Nothing fights a North American blizzard quite like the vibrant, aromatic heat of the Kenyan coast. Since you’re looking for something “interesting” to win those sats, we’re skipping the basic stews and going straight for Kuku Paka.
It’s a classic Swahili chicken curry that’s incredibly creamy, bright yellow (the perfect contrast to a white-out), and carries a ginger-garlic kick that will thaw you right out.

Ingredients
- 1.5 lbs chicken thighs (bone-in gives more flavor, but boneless works).2 cans of full-fat coconut milk1 large onion (diced), 3 cloves garlic (minced), 1-inch fresh ginger (grated).1 tbsp curry powder, 1 tsp turmeric (for that golden glow), 1/2 tsp cumin, and as many green chilies as your heat tolerance allows.Juice of 1 lime and a handful of fresh cilantro.

- 👨🍳 How to Make It The Char: Rub the chicken with a little salt, pepper, and a pinch of turmeric. Broil it in your oven or sear it in a hot pan until the skin is browned and slightly charred. It shouldn’t be fully cooked yet. The Sauce: In a large pot, sauté the onions until translucent. Add the garlic, ginger, and chilies. Stir for 1 minute until your kitchen smells like heaven.The Spices: Toss in the curry powder, cumin, and turmeric. Let them “toast” in the oil for 30 seconds. The Simmer: Pour in the coconut milk. Bring to a gentle simmer (don’t boil it too hard or the coconut milk might separate).The Merge: Add the charred chicken into the sauce. Cover and simmer on low for about 20–25 minutes until the chicken is tender and the sauce has thickened. The Brightener: Stir in the lime juice and top with a mountain of fresh cilantro.
