Eggs on a bed of onions and fresh garlic.

Chef’s notes

Start the onions with the garlic if you prefer them beyond caramelized. If you don’t want runny yolks, cover throughout, and/or just break them. Freeze pre-cut onions and/or use pre-minced garlic to trade a bit of health and flavor for convenience and reduced prep/cook time. A variety of vegetables will work, obviously, including hash browns. These ingredients are nice for winter.

Ingredients

  • 2 eggs
  • 4 cloves fresh garlic
  • 1/2 cup minced, slivered, or diced onions
  • Salt
  • Spinach, kale, or both
  • Square of real butter

Directions

  1. Smash garlic
  2. Melt w/ butter
  3. Stir fry with onions
  4. Bring to circle in center
  5. Greens atop
  6. Eggs atop
  7. Cook ~3 min
  8. Shake non-stick / silicon spatula (watch for onion smoke)
  9. Serve with orange juice 🙂

Just had the same thing except instead of greens I used squash and instead of eggs, chili sauce.
