3 (or 5) Ingredient Chocolate Mousse

This started as a spontaneous kitchen experiment—an amalgamation of recipes from old cookbooks and online finds. My younger daughter wanted to surprise her sister with something quick but fancy ("It's a vibe, Mom."), and this is what we came up with. It’s quickly established itself as a go-to favorite: simple, rich, and deeply satisfying. It serves 4 (or 1, depending on the day; I am not here to judge). Tightly wrapped, it will keep up to 3 days in the fridge, but I bet it won't last that long!

No-Cream Creamed Spinach

Just like the classic steakhouse side. Fat and flour come together in an easy roux that becomes a cream gravy with the addition of milk. Be sure to blanche, drain, and chop the spinach before adding or the water released by the greens will soak the recipe.

Sweet-and-Sour Brisket

This is a crowd-pleaser of a dish that is infinitely scalable to feed any size crew. It’s great with mash or crusty bread to mop up the sauce. Roasted carrots are a great side, as is a green salad.
